KitchenBoom Signature Dish

Smokey Bourbon BBQ Short Ribs

This signature recipe combines slow-braising science with deep, smokey fire flavors. Bone-in beef short ribs are seared to achieve a deep caramel crust, braised in dark bone broth and authentic Kentucky bourbon, then finished with a sticky chipotle glaze.

Execution Steps

  1. Apply the Dry Rub: Combine smoked paprika, chipotle powder, brown sugar, salt, and black pepper. Coat short ribs heavily on all sides, pressing spices into the meat.
  2. Sear for Crust: Heat a heavy Dutch oven over high flame. Sear short ribs in batches for 3 minutes per side until a deep mahogany crust forms. Set ribs aside.
  3. Deglaze with Bourbon: Pour Kentucky bourbon into the hot pot, scraping up caramelized browned bits from the bottom. Allow liquid to reduce by half.
  4. Slow Braise: Pour in bone broth, cider vinegar, and smashed garlic. Return ribs to Dutch oven, cover tightly, and braise in oven at 325°F (160°C) for 3.5 hours until fork tender.
  5. Glaze & Char: Brush ribs with reduced pot juices and finish under broiler for 4 minutes until bubbling and sticky.

Pro Tip for Maximum Flavor

Let the short ribs sit in the braising liquid overnight in the refrigerator. Reheating them in their own gelatinous broth the next day doubles flavor depth and produces impossibly juicy ribs.
